In collaboration with Bologna Connect Association and with the patronage of the Emilia Romagna Region, the Italian Cultural Institute of San Francisco is happy to present the book Culinary Secrets of Emilia Romagna, edited by journalist and author Stefano Andrini. During the meeting Stefano Andrini will be interviewed by Mary Tolaro-Noyes, a refined scholar of the history and traditions of the region and in particular of the city of Bologna.
At the center of this journey are grandmothers, testimonies of an ancient tradition, chefs and restaurateurs who have successfully interpreted this tradition, and the secret places where history and food intertwine in an indissoluble way.
The storytelling of the cuisine between the Via Emilia and the West will be interspersed with videos made by Federico Formigoni (subtitled in English by Enrica Nicoli Aldini) showcasing a group of women specialized in popular music inspired by food; the re-enactment of a Roman legionary talking about the ancestry of the piadina; a humorous explanation of why the Romagnoli are devoted to the pig; and a foray into the kitchens of the Grand Hotel in Rimini.
Tuscany will also be featured, with the presentation of the first English translation of the book The Secrets of Tuscan Cuisine (I segreti della cucina toscana), edited by Stefano Andrini and Andrea Fagioli. Throughout the second part of the event, different voices will celebrate the legendary Tuscan Cuisine, one of the oldest and most beloved in the country.
The evening will close with a tasting of tigelle and zuccherini prepared by chefs Bianca & Anna, and accompanied by wines offered by Tre Monti di Imola and the confectionery specialties of the Babbi company.
